[llvm] [cmake] Sync Haiku cases in config.guess with downstream (PR #228784)

Add the ppc case and replace the x86_64-specific case with the
downstream wildcard, so that other Haiku architectures (e.g. aarch64,
riscv64) are recognized. x86_64 still maps to x86_64-unknown-haiku.
