It appears llvm-toolchain-*-5.0 repositories do not exist. I get an apt-get
error saying that it is unable to download the Release file. I did a bit of
digging and, for example, this URL does not exist:

http://apt.llvm.org/stretch/dists/llvm-toolchain-stretch-5.0/

While both llvm-toolchain-stretch-4.0 (4.0) and llvm-toolchain-stretch (6.0)
do.
